When you have a Duff, you want to take things slow. I suggest a slow roast, 400 degrees or so, for a few hours, really let the juices flow. He makes his own gravy you know...

I usually stuff the carcass with sausage and cornmeal, then wrap it in tin foil. You'll really want to savor the drippings.
